This sparkling cocktail combines the tart freshness of Granny Smith apple juice with the subtle sweetness of anisette, enhanced by a hint of yellow lemon. The Clairette brut adds lively, elegant bubbles that give this creation its lightness. A perfect balance of freshness and character.
Imagined by Juliette Cothenet during the Valence en Gastronomie festival, this cocktail was designed to harmonize with the refined dishes of Florian Descours - La Bòria.
Ingredients
1 cl sugar syrup
1 cl anisette
2 cl lemon juice
4 cl Granny Smith apple juice
6 cl Clairette de Die Brut Maison Jaillance
Recipe
Put ice cubes in a glass.
Add the sugar syrup, anisette and lemon juice.
Pour in the apple juice.
Finish with Clairette de Die Brut Maison Jaillance.
Stir gently to preserve the bubbles.
Decoration: Apple fan and fennel flower.
