Crémant is made using the traditional method also used in Champagne.
The grapes are harvested exclusively by hand, in compliance with the strict Crémant de France specifications. The main differences with Clairette de Die Doux? The first fermentation takes place in vats. The dry wine is then bottled for a second fermentation and resting on laths in our cellars, for at least 18 months.
The traditional method also includes the addition of a liqueur de tirage to work the bubbles and a liqueur d'expédition for aromatic balance.

The Diois blossoms in an exceptional natural setting in the Vercors Regional Nature Park, at the gateway to Provence.
It benefits from an ideal climate, combining mountain coolness with generous sunshine. The small plots of Jaillance vineyards are located on hillsides at altitudes of 300 to 700 m, on clay-limestone soils.
