Soil

Since 2001, with the acquisition of the Brouette winery, Jaillance has been producing Crémant de Bordeaux. Benefiting from a mild oceanic climate and plenty of sunshine, the Crémant de Bordeaux appellation covers the entire vineyard of the'AOC Crémant de Bordeaux.

Soil type: Clay-limestone
Vine density: 4000 vines/hectare
Yield: Between 72 and 78 hl/hectare

Harvest

Harvesting: by hand on open-work trays
Pressing: with pneumatic presses
Maximum extraction of 100 liters of juice for 150kg of pressed grapes

Winemaking

Produced using the traditional method
Second natural fermentation in the bottle with the addition of sugars and yeast
Aged a minimum of 12 months on lees
Ageing conditions: total darkness and constant temperature of 12°.
Extraction of dead yeast by stirring and disgorging
Dosage of expedition liqueur and corking
