Grape variety(ies)

Grape varieties: 60 % Merlot, 30 % Cabernet Sauvignon and 10% Cabernet Franc.

Soil

Vineyard area: 20 ha
Soil type: gravel mixed with red clay on limestone subsoil

Breeding

Planting density: 5,500 vines per hectare
Average age of vineyard: 35 years (the oldest vines are over 80 years old)
Vineyard management: natural grassing between rows, double Guyot Bordelaise pruning leaving two base branches, leaf thinning and green harvesting in July for better ripeness.

Harvest

Harvested exclusively by hand

Winemaking

Wine-making: Manual sorting of grapes, total destemming. Fermentation in temperature-controlled stainless steel vats. The marc cap is regularly immersed at the start of fermentation. Maceration for two weeks (between 28° and 32° C).
Aging: 12 months in stave-wood oak barrels renewed by quarter.
