It benefits from an ideal climate, combining mountain coolness with generous sunshine. The small plots of Jaillance vineyards are located on hillsides at altitudes of 300 to 700 m, on clay-limestone soils.

Bordeaux owes its international distinction as France's leading AOC vineyard to the great diversity of its prestigious terroirs.
The vineyards benefit from a mild oceanic climate and plenty of sunshine. In the heart of this climate, Jaillance carefully selects its grapes for their aromatic expression, and signs its different cuvées with exacting standards.

Jaillance is the resolutely effervescent story of French winegrowers and terroirs emblematic of our oenological culture. It's a story that began in the Drôme, the birthplace of Clairette de Die, the icon of Maison Jaillance. After the Rhône Valley, it continued in the Bordeaux region.
Today, Jaillance signs no less than 5 AOCs and offers so many fine references... Sparkling AOCs: Clairette de Die Doux & Brut, Crémant de Die, Crémant de Bordeaux and a whole range of still and estate wines, including 2 AOCs: Coteaux de Die and Châtillon-en-diois. The profiles complement each other harmoniously.

Patrick and Mathieu

1870

At the foot of the Vercors, Patrick and Mathieu cultivate 23 hectares of vines between Menglon, Châtillon-en-Diois and Recoubeau. Since 1870, five generations have succeeded one another on these lands, passing on their know-how and passion. Pioneers of Jaillance since 1950, the family converted the estate to organic farming in 2002, affirming their commitment to sustainable viticulture. In 2022, their son Mathieu joined the estate, marking a new stage in the family history: together, they created the EARL des Aremas, continuing the work begun generations ago, combining transmission and respect for the environment.


FRAUD FAMILY
Elsa and tybo

1964

In the heart of the Diois, between Solaure-en-Diois and Die, Elsa and Tybo passionately cultivate a vineyard of over 7 hectares, which they work themselves, from pruning to harvesting. The GAEC de la Trapanelle is part of a history of family inheritance, notably from Elsa's parents, Aude and Jean-Pierre. Tybo joined the farm in 2022, followed by Elsa in 2024. "My favorite time of year is spring," confides Elsa, "when the vines are growing fast and you can see them getting bigger every day. As for Tybo, he prefers the harvest: "That's when we see the fruit of all our labor." Buoyed by this heritage, they are developing the estate with commitment and autonomy.


Aurélie Thomé

2011

Aurélie Thomé cultivates 8 hectares of vines, including 6 of muscat and 2 of clairette, certified HVE in the commune of Aurel. After studying law, she was never destined for this profession, yet in 2011 she took over the family vineyard from her father Robert, himself an heir to one of the first members of the Jaillance winery. "I grew up in a cooperative culture," she confides. "Today, I'm proud to introduce it to my 6-year-old daughter, who also lives by the rhythm of the vines. Régis, her husband, is also a cooperator, and works in mixed farming in the neighboring commune of Molières-Glandaz. Together, they share a deep attachment to their region and to the values they pass on.

Clairette de Die
Method

Clairette de Die, sweet and fruity, is produced using the age-old Dioise method. After the harvest, the grapes are meticulously sorted and pressed to extract the sweet juice. Natural fermentation begins in vats, using only the yeast present in the grapes. The juices are then bottled for 4 months, halfway through fermentation, to finalize the bubbling process.
The Crémant
Method

Crémant is made using the traditional method also used in Champagne.
The grapes are harvested exclusively by hand, in compliance with the strict Crémant de France specifications. The main differences with Clairette de Die Doux? The first fermentation takes place in vats. The dry wine is then bottled for a second fermentation and resting on laths in our cellars, for at least 18 months.
The traditional method is followed by the addition of a liqueur de tirage to work the bubbles, and a liqueur d'expédition for aromatic balance.
