Tavel is a unique rosé thanks to a vinification process that sets it apart from all other rosés, and which is similar to that of a red wine: long macerations lasting 48 to 72 hours. After pressing, fermentation lasts 10 to 15 days at low temperature. It is a blend of free-run juice, which provides the necessary aromas, fruit, freshness and acidity, and press juice, which preserves its richness, structure and power.
