The men and women who make Jaillance share four fundamental values: respect for nature, a cooperative spirit, a commitment to quality and a spirit of innovation.
Clairette de Die flourishes in the generous sunshine of the Drôme valley, sheltered by the foothills of the Vercors. Its mountainous vineyards are made up of small plots rising to an altitude of 700 meters on clay-limestone soils.
Certified "Vignerons engagés" (committed winegrowers), Jaillance winegrowers take particular care with their vines, cultivating them in a sustainable way. This wine is vinified according to the unique ancestral Dioise method, without the addition of yeast or liqueurs. This is what gives it its natural character.
Clairette de Die, sweet and fruity, is produced using the age-old Dioise method. After the harvest, the grapes are meticulously sorted and pressed to extract the sweet juice. Natural fermentation begins in vats, using only the yeast present in the grapes. The juices are then bottled for 4 months, halfway through fermentation, to finalize the bubbling process.

As with organic farming, it's a way of growing vines that respects nature and the seasons. And it also means following the rhythms of the Earth.
In other words, in biodynamic viticulture, we follow the lunar calendar to know when to plant, prune or harvest. The soil is alive, and the grapes truly express their terroir.
