From vineyard to glass,
The men and women who make Jaillance share four fundamental values: respect for nature, a cooperative spirit, a commitment to quality and a spirit of innovation.
Clairette de Die, sweet and fruity, is produced using the age-old Dioise method. After the harvest, the grapes are meticulously sorted and pressed to extract the sweet juice. Natural fermentation begins in vats, using only the yeast present in the grapes. The juices are then bottled for 4 months, halfway through fermentation, to finalize the bubbling process.
